Smoked Fish Spread


2 lbs smoked white fish

1/4 cup butter

1 c onion, small dice

1 c green bell pepper, small dice

1 c celery, small dice

2 tsp salt

2 tsp raw sugar

1 tsp lemon juice

1/4 tsp cayenne

1/2 tsp black pepper

1/2 c sliced green onion

1/4 c parsley

1-2 tsp Tabasco

1 tsp Crystal

1 cup aiolit


2 egg yolks

1 1/2 c good quality neutral oil

1-2 cloves garlic, grated


Lemon juice


Saute onions, celery and bell pepper in butter until starting to caremalize, add green onions, stir, add parsley.  Let cool.  Make aioli.  Add 1 tsp lemon juice to yolks.  Very slowly whisk in oil to egg yolks making an emulsion.  Add garlic, salt and more lemon. Adjust seasoning until delicious.  Use 1 c for recipe.  You will have some leftover-this is a good thing!

Mix all ingredients .  Adjust seasoning and refrigerate until set or use warm.
